If you are using garlic and shallots, the oil will bubble slightly more vigorously due to the water content of the fresh ingredients. This is normal, but you should still ensure that the garlic and shallot are still browning very slowly. There is also red onion finely chopped and lots of garlic. It is the jalapeno chilli, onion and garlic all fried up that give that all-important crispiness to this amazing condiment. Heat the oil in a large pan suitable for deep frying. Once the oil temperature reaches 170°C/340°F, dip the aubergine pieces in the batter and deep fry until cooked though and golden all over. Work in small batches and try not to overcrowd the oil.
